Jamaican style Jerk Chicken

Probably one of my Husband's favorite meals, I make this dish at least once a week. I use a shortcut for the spicy Jerk sauce but this recipe is delicious and most importantly fast. I let the chicken marinate overnight to let the flavor and heat really kick in.

Ingredients:

2 pounds of chicken legs and thighs
2 tablespoons of minced garlic (I use Goya minced garlic)
1 teaspoon of salt
1 teaspoon of ground black pepper
2 packets of Sazon with culantro
1 lime (I use as garnish as well)
1 tablespoon of Basil
Grace Jamaican style Jerk marinade (350 ml) - I use half the bottle


Directions:

Season the chicken with the contents of one entire lime, the Sazon packets, minced garlic, basil, salt and black pepper. Score the chicken and spoon the desired amount of Grace Jamaican style Jerk marinade into the scores. Refrigerate overnight.

When you're ready to bake:

Preheat the oven to 350 degrees. Bake on high for 35 minutes. Broil for 10 minutes at 350 degrees. Remove and garnish with cilantro and lime. Serve with white rice and sweet Plantains.
